Hi everyone, First time poster, so glad that this community exists.
My brother has been a vegetarian due to political and ethical reasons for the past two years and my parents (both in their late 50's) became vegans due to health reasons.
I'm 27 years old and married to an omnivore. My journey to vegetarianism has been a long one, but after living in India for four months in 2009 to do volunteer work, I came back to the States discovering that I had no interest anymore in eating chicken, turkey or pork. I had gone four months in forced vegetarianism, and I discovered I really kind of liked it! Red meat in my return to the States was a bit harder to give up since my husband loves steak and burgers, but in November I finally said goodbye to that as well. I'm a pescetarian since I just can't get myself to give up shellfish or sushi but I probably have that maybe once a month. It was discovered recently from doing an elimination diet that I have an allergy to gluten, which explained a lot of the weird health problems I'd had. It's not as bad as most who suffer from this allergy, but complicates things when I cook or eat. In all honesty, it's been really kind of a good thing since I had to cut out most breads, pastas, packaged snack foods, beer, cookies, cakes and pies unless they are made with a different kind of flour or are flour-less and become a bit more of a label reader ;-). I'm just really freakin' glad I'm not allergic to soy.
Well, that's pretty much it, I'm looking forward to learning from everyone :-).

Have any of you tried substituting coconut milk for cream? I don't eat dairy and would like to try to modify a recipe I have for penne in a vodka tomato cream sauce.

If You Can't Kill It - Don't Eat It!
My resolution this year is an old one, I'm going vegetarian (again). My reason is pretty much described in the line above - it just occurred to me how absurd it is for me to eat an animal that I could never kill myself.
Last time I made this decision was roughly 10 years ago and I went about it completely wrong - I went from every-day omnivore to full-blown vegetarian in less than 24 hours. No background information about it. No reading about nutrition and things to consider. No nothing. Yes, I completely shocked my body and became quite ill.
This time I'm doing it "the right way". I'm cutting out meat one by one, starting with red meat. Then chicken. Last, but hardest for me, fish. I've joined several vegetarian communities - both here on LJ as well as Swedish online forums - and bought myself a good basic beginners vegetarian cookbook. I'm getting more, as soon as I've picked out a few recommended beginner books.
Any tips? Recommendations? I appreciate any help I can get!

6:05p Day in the Life
I'm going grocery shopping and would like some inspiration. I've been trying to do meal planning because for a while I was living off of packaged foods and not getting much valuable nutrients. So post a "day in the life" of you! What do you have for breakfast, lunch, dinner and snacks on a typical day?
Breakfast: -yogurt with granola or cereal -oatmeal -fresh fruit if we have it -toast with preserves (I know it seems like a lot but I eat small portions of each)
Lunch: -soup of some kind or a big ass salad with textured vegetable protein and nutritional yeast
Dinner: -rice, pasta, veggie burgers or quorn nuggets
Snack: -tortilla chips, yogurt or fruit

12:57a Questions on vegan nutrition
Hi, I've been vegetarian since July 2008, and a few weeks ago I decided to try out being vegan. Now I realise it was a pretty rash decision because I didn't read up properly on nutrition... so here I am! I've read some related posts but to be on the safe side I thought I'd share info on my meals, etc.

2:21p Questions from a newbie?!
Hi there, I recently turned vegetarian (after being a big meat-eater my whole life) for ethical reasons. Now though, it seems to have opened up a whole can of ethical worms and it's starting to take over my whole life! lol Anyway, I've got a couple of questions to ask, any help would be greatly appreciated!
Is it safe to have protein shakes/bars as a big source of protein?! I try to make up most of my protein through other products like pulses/soya/quorn etc. but I'm used to working-out/going to the gym/doing yoga a lot and I find that I need more protein than I'm getting through normal foods. Is it safe for me to take protein shakes and bars throughout the week to help supplement this?!
Also, I take Veg*n Vitamin & Mineral food supplements from Holland & Barrett basically to make sure I'm getting enough/all the vitimins I need. However, I'm extremely worried that between them and my protein bars/shakes I'm getting WAYYYY too much of certain vitimins like B12. How unsafe is this?! is there anything I should really watch out for?!
And can anyone recommend, or link me to, any healthy recipes for tofu?

5:01a New Years Resolution
So, my new years resolution was to make the switch from vegetarian to vegan but I don't really know what is vegan and what isn't besides the the obvious dairy products, eggs etc so I was hoping you'd be able to tell me what things aren't vegan that you wouldn't expect, like I only found out I'm going to have to go elsewhere for my tattoos because of the ink!
And another thing I just want your opinion on; about a year ago my grandmother bought my sister a pair of $100 leather shoes but after my sister went vegetarian she gave the shoes to me and I've been wearing them since. I don't want to throw them out because A) they aren't worn out in the slightest, B) they were $100 and C) I feel it would be wasteful. What would you do in the same situation?
And another thing, haha, is it possible for dogs and cats to live on vegetarian diets?

I ate lunch today at Panera, and I felt the urge to post about how much I like that place. I love the fact that their website lists all the ingredients for essentially everything they make/sell. As we all know the pains of determining what is included in our restaurant/fast food meals, it's nice to see a place freely distribute their ingredients lists. I also appreciate that the yogurt is gelatin free so I can enjoy a smoothie/parfait at will. Ok, all done now. :)

Hi,
I just had a quick question. I've been vegetarian for about three months ago. It was something I always wanted to do, and tried a couple times, but could never achieve under my mom's roof. I moved out four years ago, but as I am dreadful at cooking, couldn't accomplish a lot then either. Now I'm ok, and determined, and live with my boyfriend, who loves to cook, and is ok with making me a little separate skillet of fake meat and things. I never really ate a lot of red meat anyway, but I did used to eat a LOT of chicken. I loooove fake chicken nuggets (so far I have equally loved Quorn and Morningstar), but something I DO miss that I can't quite figure out how to do is grilled chicken breast. My boyfriend used to make me honey dijon chicken, parmesan chicken, etc. So far, I've only run across breaded "chik'n" patties.
How would I go about recreating some grilled chicken alternative? It's the only thing I miss and can't easily find. :(

What are your experiences with faux meat in Chinese restaurants? I'm very intrigued by "vegetarian chicken w/ broccoli", "vegetarian beef w/ garlic" and "vegetarian pork w/ black pepper sauce" but I've never ordered such food, so I'm apprehensive.

Hey there!! I don't post here much but I do try to read all the posts. I have a question for all you people though.
I went veg about 7 months ago. My reasons are a mixture of things. I grew up around cows and therefore befriended several. I had to dissect a pig in high school that one of my group mates named Wilbur. My dad got me pet goat that I named Katie but then when she got old he fed me a "Katie burger" literally. Aside from all that I try to live by the creed "harm none" as much as I can and being vegetarian (and eventually vegan) is right in line with that to me.
However I was discussing this with someone--how I want to lead a more cruelty free life and not contribute to factory farming etc--and I got the response of "not eating meat won't affect the meat industry at all". This person claims that grocery stores have a set budget for meat products and regardless of what I do or don't buy at them they are still going to buy the same amount of meat products thus still contributing to factory farming and such.
Now me, I kinda find this hard to believe as it would then mean that all the veg*ns in the world are doing absolutely no good in the fight for animal welfare. It's hard for me to believe that someone not eating meat doesn't affect the meat industry somehow.
What I'm wanting to know is, is this person right? Are grocery stores still going to buy the same amount of meat products regardless of me not buying a meat product from them? Or is this person just trying to justify their eating meat and making themselves feel better because they can't be on a vegetarian diet (their body won't accept it--they've tried before and gotten very sick from it)?

Does anyone have experience with raising a child vegetarian? I want my son to choose to remain vegetarian when he's old enough, so I want to be encouraging rather than restrictive, and I want to be sure that he's healthy and doesn't feel too weird when he starts school (though I am sure he will feel somewhat different, which is fine). I have done some research, so I feel confident about basics like getting him enough nutrients and that sort of thing. I'm just curious whether anyone has any wisdom or experience to share on this topic. Thank you!

12:31p Mayo Diet
I'm wanting to do the Mayo Clinic Diet for 7 days (the real Mayo Diet, not the fad one). What should I eat as my main source of protein? (I'm not vegan, but I don't eat eggs or fish.) The Mayo Diet calls for proteins and fats such as in fish (which I don't eat). Normally my proteins come from nuts, oils, certain veggies, and veggie-meat... but the proteins in vegetables won't count, because the vegetable only counts as the vegetable in the Mayo Diet.
Help?
